Recipe makes 12 hot cross buns.
Ingredients:
Dough:
- 4 ½ cups of plain flour (sifted)
- 1 tablespoon cinnamon
- 2 tablespoons instant yeast
- ½ cup white sugar
- 1 ½ cups warm milk
- 1 teaspoon salt
- 50g butter melted
- 1 beaten egg
- 2 ½ cups of milk chocolate or dark chocolate chips
Glaze:
- 1/4 cup hot water
- 1/3 cup sugar
- 1 teaspoon gelatine
White chocolate crosses:
- 100 grams of white cooking chocolate
Method:
1. Heat milk until it is just warm and mix with yeast and sugar. Mix until smooth then let the mixture stand for 20 minutes (it should develop froth)
2. Add sifted flour and salt to a large bowl, making a well in the centre.
3 .Pour melted butter, yeast mixture into the well and start to gently combine.
4 .Add beaten egg, cinnamon and half of the chocolate chips and mix until it forms a dough.
5. Remove dough from the bowl and knead until it becomes elastic (usually takes 5 – 10 minutes).
6. Place the kneaded dough in a large, greased bowl and seal with cling wrap. Leave the bowl standing in warm area for 1 ½ hours until the dough has risen to be double its original size.
7. Pre-heat your oven to 180C in a fan forced oven or 200C in a non-fan forced oven
8. Once the dough has doubled in size, lightly knead the other half of the chocolate chips into the dough.
9. Separate dough into 12 equal-sized buns and place onto a baking tray lined with baking paper. Buns should be placed closely together but not quite touching.
10. Cover the tray with cling wrap and leave to stand for 15 minutes in a warm area. Dough should rise further.
11. Place buns in the pre-heated oven and bake for approximately 25 minutes. Then remove from the oven and place on wire cooling rack.
12. Combine the hot water, sugar and gelatine for the glaze and brush onto the tops of the warm buns.
13. Melt white cooking chocolate (in microwave or a double boiler saucepan) and pour into a piping bag with nozzle or a zip lock plastic bag (seal the bag and snip the corner to make a piping bag).
14. When the buns have cooled, pipe crosses onto the top of the buns over the glaze.
